Clary sage is often compared to its cousin common sage and while they have similarities clary sage is known for its camphor notes and strength of flavor. Use dry or fresh as you would common sage, also makes a nice tea, and can be used to flavor mixed drinks and spritzers. Good candidate for pesto also. Sold in 1/2 lb quantities.
